Producteur indépendant de génération en génération, la Maison Payer est tenue par Ghislain et sa fille Elise. The estate says it owns 4 hectares of vines, allowing it to control all stages from vine to wine and produce its Champagne on the property. Vineyard work, harvest, blending, bottling and manual disgorgement are carried out on the estate for several cuvées. The house also states that it has kept a cooperative spirit, with part of the harvest deposited there to elaborate two cuvées: Brut Réserve and Millésime. The wines are aged in the cellar longer than the Champagne regulations require, with non-vintage cuvées aged at least 3 to 10 years before release.
Expérience de dégustation
Visits to the estate are available by appointment. On site, visitors may meet Elise, Murielle or Ghislain depending on the season, weather and current vineyard or cellar work. Tasting and sales at the property are by appointment, and visits are in French. The site also gives food-pairing and tasting notes for some cuvées: one champagne shows aromas of warm brioche with lemony and minty notes; Brut Tradition is described as suitable with duck foie gras, champagne jelly, fig marmalade and gingerbread, and also with sunfish and grey shrimps or poultry with forestière sauce, and can be served as an aperitif. The demi-sec is presented as ideal with fruit and dark chocolate desserts or Fourme d’Ambert cheese.
