House history

The estate boasts a family history rooted in Chaumuzy since 1765. The first ancestor mentioned is Thomas Pistat, a winemaker during the time of Louis XV. In 1900, Léa Pistat and Amédée Boutillat, from winemaking families, began to vinify and market their champagne under their own name, giving birth to Champagne BOUTILLAT PISTAT. In 1947, the year the Chaumuzy cooperative was created, Serge Boutillat was born, who would take over the family business at a young age and become heavily involved in the cooperative until becoming its president. In 1975, Serge Boutillat and Eliane Dautreville launched the marketing of Champagne Serge Boutillat. Today, Cédric, Adeline, and Emilien continue this family legacy, presented as that of ten generations of winemakers.

Tasting experience

The site describes several cuvées and their tasting profiles. A blend aged for a minimum of 5 years in the cellar develops on the nose with notes of brioche, yellow fruits, and almonds, and can be enjoyed as an aperitif or during a meal. Another cuvée is presented as fine and balanced, with floral and white fruit aromas. The rosé, sweeter and softer, is recommended with desserts; it is described as gourmet and fruity, with notes of raspberries, blackcurrants, and pastry cream, appreciated as an aperitif or dessert. The vintage, produced only in exceptional years and aged for a minimum of 9 years, offers a powerful and intense bouquet mixing toasted notes, stewed pears, and citrus fruits, notably candied lemon. Finally, a cuvée aged for nearly 20 years in the cellar is described as the champagne for grand occasions, with notes of gingerbread, dried fruits, and honey, suitable for gourmet meals.
